Breakfast Muffin Recipe


If I only had time to meal prep for a single meal, I would choose breakfast every single time. For me, there's nothing worse than starting the morning with nothing to eat. My days start off busy and only get busier as the day goes on, so I like to have things ready to grab and go! Enter these oatmeal banana muffins these are so good and they've become a regular on the meal prep menu in my kitchen. I got the recipe from @yummytoddlerfood on Instagram but I didn't have all of the items needed in the original recipe so I had to improvise. Here's a link to the original recipe:


The main deviations are honey, milk and crushed walnuts...

The original recipe calls for maple syrup, but I didn't have any so I had to substitute it with honey. I did some research and it turns out that honey actually adds moisture to a recipe so it's actually great to use when baking! My next modification was the milk, I'm lactose intolerant so I used Lactaid milk in order to avoid any discomfort later. You can even use any plant based milk of your choice. Lastly, I opted for crushed walnuts instead of chocolate chips. Walnuts are rich in antioxidants and omega-3s, plus my kids actually like them so when something is yummy and nutritious it's a win-win!


Here's my modified version:

Oats 2 cups

Ripe bananas 2 cups

Milk 6oz

Eggs 2

Honey 1/3 cup

Vanilla extract 1tsp

Cinnamon 1tsp

Baking soda 1tsp

Crushed walnuts 1 cup


First preheat your oven to 375°F

Throw the oats in a blender on their own until they grind enough to look like flour

Add all of the other ingredients and blend well

Dump into a greased muffin pan

Sprinkle crushed walnuts on top

Bake for 20 minutes


I have one last suggestion if you want to go vegan... Follow the original recipe, but replace the milk with plant based milk and omit the eggs. I did this once on accident and they were still amazing without the eggs! These breakfast muffins are soooooo good and they've become a regular on the meal prep menu in my kitchen. All three of the recipes I've tried have been a hit in my house, even the accidental vegan one! Give it a try and let me know how you like it 😉
