These little egg bites have been such a time saver for me, but also, I can change the ingredients I use so it's delicious and never gets boring. In this recipe, I used eggs, bacon, asparagus and potatoes to keep it simple and delicious.
Here's what you'll need:
6-8 eggs or egg whites
8 pieces of bacon
2 cups chopped potatoes
2 cups chopped asparagus
Start by pre-heating your oven to 400°F
Put your bacon in the oven while you chop your carbs/veggies (about 15mins)
Remove bacon and change oven to 375°F
Once you're done chopping, combine and sautee your potatoes and asparagus (about 15-20 mins)
Grease muffin tin (I use olive oil spray)
Add potatoes and asparagus to the base
Crumble the bacon and sprinkle on top
Mix your eggs or shake up the egg whites and pour them in about 3/4 full in each slot
Put it in the oven for 20mins
Remove, cool and enjoy your delicious little masterpiece. You can store them in the refrigerator for 2-3 days or freeze them to enjoy all week!
You can combine so many more veggies and ingredients. Some ingredients that I love using are sweet potatoes, mushrooms, spinach, bell pepper, turkey ham, ground beef, cheese, soyrizo, beans, the list goes on and on...
