I've been eating pretty bad since Valentine's day to be honest so I decided to reset with something super yummy and healthy. I made this oven baked salmon with oven roasted brussel sprouts and quinoa. I gotta say I'm pretty proud of it so I decided to share the recipe with you on my blog today. Here we go!
What you need:
Salmon
Brussel Sprouts
Olive oil
Garlic salt
Salt & pepper
Quinoa
Start with the brussel sprouts.
Pre-heat your oven to 400° F. You're going to wash the brussel sprouts and cut them in half. Throw the halves in a bowl and drizzle a little olive oil and garlic salt in there. Mix well and dump on to a baking pan. Throw it in the oven and bake for approximately 30 minutes.
Now on to the quinoa.
One cup of quinoa can make about 3-4 servings. Dump one cup of quinoa in a pot and wash with warm water (this gets rid of any bitter taste). Add two cups of water and bring to a boil. Once it's boiling, bring the flame down to a simmer, add salt to taste and cover for about 15 minutes. Make sure to stir occasionally.
Finally, we bake the salmon.
Preheat your oven to 350° F. Put the salmon in an aluminum foil boat. Season with salt & pepper and bake for 15-18 minutes.
