When I make fish, it's usually salmon or tilapia so I decided to change it up and go for mahi mahi. I didn't want to just replace the type of fish with the same old sides (usually rice or quinoa with steamed veggies). So I got creative and I'm happy to say that it went very well! Today I'm sharing my sweet and savory mahi mahi recipe.
What you need:
Mahi mahi filets
Peaches
Sweet potatoes
Orange
Green bell pepper
Red bell pepper
Purple onion
Spinach
Salt
Pepper
Olive oil spray
Here's the recipe:
Preheat oven to 400 degrees (Fahrenheit).
Slice one peach, one sweet potato, one green bell pepper, one red bell pepper and 1/4 of a purple onion into cubes.
Apply a light layer of olive oil to a baking dish and toss in the sliced fruits and veggies.
Cut the orange in half and squeeze it all over the fruit and veggie mix, bake for 10 minutes.
After 10 minutes, toss the spinach over fruit and veggie mix and place mahi mahi filets evenly spaced throughout the baking fish.
Squeeze the other half of the orange over the mahi mahi filets and spinach.
Sprinkle salt and pepper to taste over the mahi mahi and spinach, bake for 15-20 minutes.
Serve and enjoy!
