Shrimp & Veggie Stir Fry Recipe


So, I'm going to be totally honest with you. This was not supposed to be a shrimp and veggie stir fry. My plan was to make shrimp fajitas but, when I looked in the fridge, I only had one red bell pepper 😱 I had to get creative to make a meal so I looked to see what I had. I found one Mexican squash, some broccoli and a bag of frozen veggies (carrots, peas, corn and green beans). That's how this meal actually came to be. It turned out great and since I had some people asking about the recipe, I decided to make it my blog post today.


What you need:

Medium or large shrimp (tail off)

Yellow onion

Red bell pepper

Mexican squash

Broccoli

Frozen or canned carrots, peas, corn and green beans

Minced garlic or garlic seasoning

Cajun seasoning

Olive oil spray


Here's the recipe:

Slice 1/2 of an onion into rings and cut all the veggies.

Apply a light layer of olive oil spray (or actual olive oil) to a non stick skillet pan and set heat to medium.

Throw 1/4 onion, bell pepper, squash and broccoli in the pan and sautee for approximately 5 minutes. Put the veggies in a plate and set aside.

Apply another light layer of olive oil spray to a non stick skillet pan and keep heat at medium.

Throw the shrimp and other 1/4 onion into the pan for 2-3 minutes on each side. Season with Cajun seasoning and either minced garlic or garlic seasoning. I like to use Weber Roasted Garlic and Herb seasoning and N'Orleans Cajun seasoning.

Now add the frozen or canned veggies to the mix and cover for about 5 minutes on low.

Add the sauteed veggies and mix everything together.

Serve alone or add some brown rice or quinoa for some healthy carbs.
